- 2 ramen cakes (e.g. millet & brown rice ramen or your favorite ramen)
- 2 tbsp avocado or olive oil
- 4 oz shiitake mushrooms, sliced (stems removed)
- 4 garlic cloves, minced
- ~½ lb boneless skinless chicken thighs, cut or shredded
- 4 cups golden maple bone broth
- 1½ tbsp low-sodium soy sauce
Spices & Seasonings
- ½ tsp garlic powder
- ¼ tsp ground ginger
- 1 tsp chili powder
- Salt & freshly ground black pepper (to taste)

- Bean sprouts
- Sliced green onions (scallions)

- Soft or hard boiled egg

Steps
- Prep: Slice mushrooms. Mince garlic. Cut or shred chicken. Cook ramen according to package directions; drain and set aside.
- Sauté Aromatics: In a large pot, heat oil over medium heat. Add mushrooms and garlic. Cook ~4-5 minutes until mushrooms are soft and aromatic.
- Cook Protein: Add chicken to the pot. Season with garlic powder, ground ginger, chili powder, salt, and black pepper. Cook until chicken is no longer pink inside (if using pieces) or heated through (if shredded).
- Add Vegetables & Broth: Pour in golden maple bone broth and soy sauce. Bring to a simmer.
- Simmer: Let simmer ~8-10 minutes so flavors meld and mushrooms fully infuse the broth.
