Ingredients

Main Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • ½ large yellow onion, diced
  • 8 garlic cloves, minced
  • 3 tbsp chicken bone broth
  • 1 tbsp avocado oil (or olive oil)
  • ¼ cup coconut cream (or heavy cream)
  • 3 tbsp butter or ghee
  • 2 tsp sea salt

Spices & Seasonings

  • Freshly ground black pepper (to taste)
  • Additional sea salt (to taste, as needed)

Optional Add-Ins / Garnishes

  • Chopped fresh chives
  • Extra butter for serving
  • Fresh herbs (parsley, thyme)

Steps

  1. Prep: Peel and cut potatoes into chunks. Dice onion and mince garlic.
  2. Sauté Aromatics: In a small pan, heat avocado oil over medium. Add onion and cook 4–5 minutes until soft. Add garlic and cook 1 minute.
  3. Add Vegetables & Broth: Add chicken bone broth to the onion mixture. Cook 4–5 minutes until slightly reduced.
  4. Simmer: Place potatoes in a large pot, cover with water, add 2 tsp salt, and bring to a boil. Cook until fork-tender (about 20–25 minutes). Drain and return to the pot.
  5. Finish & Serve: Add the onion-broth mixture, coconut cream, and butter to the potatoes. Mash until smooth. Adjust salt and pepper to taste. Serve hot, topped with chives, extra butter, or fresh herbs.
