Ingredients
Main Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3–4 garlic cloves, minced
- 4 cups chicken bone broth
- 2–3 cups egg noodles (or your preferred noodle)
- 1½ lbs bone-in, skin-on chicken pieces (breasts, thighs, or a mix)
- Fresh parsley, chopped (for garnish)
- Fresh dill, chopped (for garnish)
- Juice of 1 lemon
Spices & Seasonings
- 2 bay leaves
- Salt (to taste)
- Freshly ground black pepper (to taste)
Optional Add-Ins / Garnishes
- Additional fresh herbs (thyme, chives)
- Extra lemon wedges
- Spinach or kale (for added greens)
Steps
- Prep: Dice onion, slice carrots and celery, and mince garlic. Pat chicken pieces dry.
- Sauté Aromatics: In a large pot, heat olive oil over medium. Add onion, carrot, and celery. Cook 3–4 minutes until softened. Add garlic and sauté 1 minute.
- Cook Protein: Add chicken pieces to the pot, sear lightly, and season with salt and pepper.
- Add Vegetables & Broth: Pour in chicken bone broth and add bay leaves. Bring to a simmer.
- Simmer: Cover and simmer until chicken is cooked through (25–35 minutes depending on cut). Remove chicken, shred or dice, discard bones/skin, then return meat to the pot. Add noodles and cook until tender (7–8 minutes).
- Finish & Serve: Stir in lemon juice and adjust seasoning. Serve hot, garnished with parsley, dill, or extra herbs.
