- 2 lbs lean ground beef
- 2 cups beef bone broth
- 1 (24 oz) can crushed tomatoes
- 2 cans kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 2 bell peppers, diced (any color)
- 1 yellow onion, diced
- 1 cup fresh or frozen corn
- 4 garlic cloves, minced
- 1 cup fresh cilantro, chopped (for garnish)
- 3 tbsp olive oil (for sautéing)
Spices & Seasonings
- 4 tbsp chili powder
- 2 tbsp smoked paprika
- 1½ tsp Himalayan pink salt (or to taste)
- 1 tsp dried oregano

Steps
- Prep: Dice onion and bell peppers, and mince garlic.
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add garlic, onion, and bell peppers. Cook 5–7 minutes until soft and fragrant.
- Cook Protein: Add ground beef and cook 5 minutes, stirring in chili powder, smoked paprika, oregano, and salt. Continue cooking until nearly browned.
- Add Vegetables & Broth: Stir in beans, corn, crushed tomatoes, and bone broth. Bring to a gentle boil.
- Simmer: Reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally, until thickened.
- Finish & Serve: Stir in cilantro. Serve hot with shredded cheese, sour cream, avocado, or tortilla chips. Pairs well with cornbread or rice.
